Easter 2018

I remember Easters long ago. My mom always made sure I had a new outfit--a hat, a dress, a coat, stockings, and new shoes. On Easter morning there were baskets filled with delicious candy. We went to church and then shared a wonderful meal with relatives.

Today we'll host a house full of adults since our family is at that stage where there's lots of young adults and older adults, but not too many children, and it appears that the children will celebrate elsewhere. We could be surprised, however, by their appearance and that would be welcome of course.

It's a relatively small crowd for our big family with about twenty loved ones coming. We'll have plenty of veggie options since some of our guests are vegetarians and we'll have traditional Easter foods too. The meal will include ham, salad, spinach soufflé, carrots, nice bread, and my mom's wonderful macaroni and cheese--a family favorite. For dessert I'll make a vanilla cake with raspberry jam and buttercream-coconut frosting. I'll decorate with jelly beans and serve it with ice cream.

We'll likely gather for appetizers and drinks then sit down to dinner. Perhaps some will go for a walk or play a board game afterwards. It's likely that this will be the last holiday for a while when I'll have all three of my sons home--so I want to make sure it is special. They're all spreading their wings these days and traveling far and near for work and school related events.

Happy Easter to all who celebrate, I hope we all have a great day!
