My mom has always been very proud of her Irish heritage. As a child, she would often discuss her Irish roots and traditions. Today I'll honor that by having her to dinner for corn beef and cabbage--a boiled dinner. I know this will bring a shine to her eyes and memories of many good Irish celebrations of the past.
