Buddha bowl buffet

 Almost once a week family members come for dinner. I often try something new for these great weekday gatherings. My children work hard at their jobs so I like to give them some reprieve during the week. I also love the chance to catch up, hear about their lives and make plans for future family events. 

Build your own Buddha bowl

Tonight I thought I'd make a Buddha bowl buffet. Officially a Buddha bowl is a vegetarian meal, served in a single bowl or bowl-like plate consisting of small portions of several foods, served cold. I'll stretch that definition a bit by adding some warm foods as well as chicken and fruits. 

The buffet will include ingredients from the following recipes:

Essentially, the bowls will include:
  • brown rice
  • peanut tofu
  • grilled or stove-top peanut chicken
  • roasted broccoli
  • roasted sweet potatoes
  • roasted chick peas
  • spinach
  • chives
  • red cabbage slices
  • bell pepper slices 
  • grated carrots 
  • crushed peanuts

I'll begin by making the dessert. I'll put that aside and warm up before serving. Then it's slicing, shredding and grating the vegetables. After that  I'll prepare the vegetables that will be roasted. Finally, I'll prep the brown rice, peanut tofu and peanut chicken. 

Once the foods are prepared, I'll keep the warm foods heated at a low oven, and set the cold foods on the table in colorful bowls. 

For drinks we'll offer a light white wine, beer, seltzer and tap water.
